Tom Kha Gai

Tom Kha Gai is one of my favourite soups. After I go for Thai and have some, im litterally craving it for weeks after. I tried to make my own a while ago and the attemped failed badly. I tried again and succeeded! I mean it wasnt perfect, but it was pretty dam close! For those who havent had it, Its a Coconut milk soup thats a little bit tangy and usually has chicken and mushrooms in it (ill post recipe below). Its tasty and Healthy!

If you want to try it yourself here is the recipie! Please be aware Im not overly fond of recipies, and typically use them as a guideline and adjust to my taste

  • 1” piece ginger, peeled and grated (or ginger powder would work)
  • Juice from 1/2 a Lemon and 1/3 a Lime
  • 1 Can low-sodium chicken broth (or equal amount to Coconut milk)
  • 1-2 Chicken Breasts
  • 2-4 oz. shiitake, oyster, or maitake mushrooms, stemmed, caps cut into bite-size pieces (I used just button and it worked just as good)
  • 1 Can. can coconut milk
  • 2 Tbsp. fish sauce (such as nam pla or nuoc nam)
  • 1 tsp. sugar
  • 1 tsp Chili oil or Samba Olek
  • Salt to taste
  •  cilantro leaves with tender stems, and lime wedges (for serving)

Add all ingredients and simmer on stove for 30 mins. This made one really large helping for myself for dinner. Again adjust according to your taste!
